Ingredients
Method
- Melt the butter and dark chocolate together in a heatproof bowl set over simmering water until smooth. Set aside to cool slightly.
- Whisk the eggs, salt, vanilla, and sugar with an electric mixer until light and pale.
- Pour the slightly cooled chocolate mixture into the eggs and whisk until fully smooth.
- Sift in the flour and cocoa powder and fold gently just until combined.
- Grease a baking dish, pour in the batter, smooth the top, and bake at 350F (180C) for about 20 minutes, until the center is just set.
Notes
Do not overbake; pull them while the center still looks slightly underset for a fudgy texture.
Let the melted chocolate cool before adding it to the eggs so it does not scramble them.
Whisk the eggs and sugar well for that shiny, crackly top.
Cool fully before cutting for clean squares.
