Easy Peach Cake (5-Minute Prep, Whisk Only)

Easy peach cake with 5-minute prep using just a whisk. Fresh sliced peaches, simple vanilla batter, chocolate chips. Tender crumb, no mixer needed. Serves 8.

Ingredients
  

  • For the Easy Peach Cake:
  • 2 peaches sliced into pieces
  • 2 large eggs
  • 7 g vanilla sugar
  • A pinch of salt
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 1/2 cups all-purpose flour
  • 7 g baking powder
  • For Topping:
  • Chocolate chips

Method
 

  1. Prepare the pan: Grease a springform baking pan and line the bottom with parchment
  2. paper. Arrange the sliced peaches neatly across the bottom of the pan.
  3. Mix the wet ingredients: In a large bowl, whisk together the eggs, vanilla sugar,
  4. salt, and 3/4 cup sugar until pale and frothy, about 1-2 minutes. Add the oil and
  5. milk, then whisk thoroughly until combined.
  6. Add dry ingredients: Place a sieve over the bowl and sift in the flour and baking
  7. powder. Whisk gently until a smooth batter forms. Do not overmix.
  8. Pour and decorate: Pour the batter evenly over the peaches, smoothing the top with
  9. a spatula. Scatter chocolate chips generously over the surface.
  10. Bake: Bake in a preheated oven at 340°F (170°C) for approximately 40 minutes until
  11. golden and a toothpick comes out clean. Let cool in the pan for 10 minutes.
  12. Release and serve: Run a knife around the edges and release the springform. Slice
  13. and serve warm or at room temperature.

Notes

Choose ripe but firm peaches - overripe will fall apart, underripe won't release flavor.
Arrange peaches neatly in the pan bottom for a beautiful presentation in the finished cake.
Whisk eggs and sugar until pale - this creates the structure for a tender crumb.
Sift flour and baking powder rather than stirring to prevent overmixing and lumps.
Don't overbake - easy peach cake is done when a toothpick comes out clean with just a few moist crumbs.
Use a springform pan for easy removal and beautiful presentation with peaches visible.
Store covered at room temperature for up to 3 days. Flavor improves on day two.
