- Prepare the pan: Grease a springform baking pan and line the bottom with parchment
- paper. Arrange the sliced peaches neatly across the bottom of the pan.
- Mix the wet ingredients: In a large bowl, whisk together the eggs, vanilla sugar,
- salt, and 3/4 cup sugar until pale and frothy, about 1-2 minutes. Add the oil and
- milk, then whisk thoroughly until combined.
- Add dry ingredients: Place a sieve over the bowl and sift in the flour and baking
- powder. Whisk gently until a smooth batter forms. Do not overmix.
- Pour and decorate: Pour the batter evenly over the peaches, smoothing the top with
- a spatula. Scatter chocolate chips generously over the surface.
- Bake: Bake in a preheated oven at 340°F (170°C) for approximately 40 minutes until
- golden and a toothpick comes out clean. Let cool in the pan for 10 minutes.
- Release and serve: Run a knife around the edges and release the springform. Slice
- and serve warm or at room temperature.
Notes
Choose ripe but firm peaches - overripe will fall apart, underripe won't release flavor.
Arrange peaches neatly in the pan bottom for a beautiful presentation in the finished cake.
