A no-churn, 4-ingredient dragon fruit ice cream blended into a creamy, vibrant pink dessert. No ice cream maker needed. Scoop it or freeze into popsicles.

Ingredients
  

  • 1 dragon fruit cut into pieces and frozen solid
  • 1/2 cup plain yogurt
  • 2 tbsp cream cheese
  • 3 tbsp sweetened condensed milk

Method
 

  1. Cut the dragon fruit into pieces and freeze until solid.
  2. Add the frozen dragon fruit pieces into a blender or food processor.
  3. Add the plain yogurt, cream cheese, and sweetened condensed milk.
  4. Blend thoroughly until you get a rich, creamy, vibrant pink texture.
  5. Scoop into popsicle molds or a container, freeze until set (about 4 hours), and enjoy.

Notes

Line your freezing tray with wrap so the fruit pieces do not stick and blend smoothly.
Use red-fleshed dragon fruit for the vivid pink color; white-fleshed will be pale.
Soften the cream cheese slightly so it blends without leaving lumps.
Let it sit 5 to 10 minutes on the counter before scooping; it freezes hard.
