- Prepare the eggplant: Slice 1 kg eggplant into rounds about 1/4-inch thick.
- Arrange on baking sheets, brush with olive oil, sprinkle with salt, and bake
- at 350°F (180°C) with heat from top and bottom for 25-30 minutes until golden
- and tender.
- Cook the meat sauce: Sauté chopped onion in olive oil for 2-3 minutes until soft.
- Add minced garlic and cook 30 seconds. Add 1/2 kg ground beef, breaking into small
- pieces as it cooks, about 8-10 minutes until no pink remains. Season with salt,
- black pepper, ginger, and paprika. Stir in fresh parsley at the end.
- Air fry the potatoes: Peel and cube 1 kg potatoes into 1-inch pieces. Toss with
- 2 tbsp olive oil and salt. Air fry in batches at 400°F (200°C) for 15-20 minutes,
- shaking halfway through, until golden and crispy.
- Prepare the béchamel sauce: Melt 2 tbsp butter in a pot over medium heat. Whisk
- in 2 tbsp flour to create a roux, cooking 1-2 minutes. Gradually whisk in 1/2
- liter (2 cups) milk, stirring constantly to prevent lumps, until thickened (5-7
- minutes). Season with salt. Remove from heat and stir in grated cheese.
- Assemble the make-ahead moussaka: In a large baking tray, layer roasted eggplant
- first, then tomato sauce, then cooked meat sauce, then air-fried potato cubes.
- Pour cheesy béchamel evenly over everything and top with shredded cheese.
- Make-ahead step: Cover tightly with plastic wrap and refrigerate 4-24 hours.
- This overnight rest allows flavors to meld and layers to set.
- Bake: Preheat oven to 350°F (180°C) with heat from top and bottom. Bake the
- moussaka 35-45 minutes until the top is golden and gratinéed, cheese is bubbling,
- and a fork pierces the potato layer easily. Let rest 5-10 minutes before serving.

make-ahead moussaka watery. Roasting concentrates flavor and removes moisture upfront. Air fry potatoes until really crispy - they'll soften during refrigeration and
baking. Starting crispy means they stay tender-crispy in the final dish. Make the béchamel last, right before assembly. It should be warm and pourable.
If it cools and thickens too much, whisk in a splash of warm milk. Refrigerate covered tightly with plastic wrap, not foil. Tight cover prevents
the top from drying out overnight. Bake from cold straight from the fridge (add 10-15 minutes) or bring to room
temperature first (faster baking). Both work beautifully. The 24-hour rule: make-ahead moussaka baked the same day is good. After 12-24
hours of refrigeration, it's extraordinary - flavors marry and develop.
